Be Still

The Bourbon variety is known for its balanced sweetness and silky body. At Finca La Perla, it delivers an intense, aromatic cup that reflects the elegance and unique character of Veracruz’s mountains.

Finca La Perla, located in the emblematic Coatepec basin in the mountainous region of Ixhuacán de los Reyes, Veracruz, sits at 1,500 masl amid a forest of oaks, pines, and fig trees.

Established on virgin land with nutrient-rich soils, the farm began production in 2021, focusing primarily on the Bourbon variety along with experimental cultivars such as Geisha, SL-28, and Pacamara. Its unique microclimate, shaped by its location beside a ravine, contributes to coffees of great complexity and character.

This Bourbon from Finca La Perla was processed using the natural method, beginning with a meticulous selection of ripe cherries at their optimal sweetness. The whole cherries were slowly dried for 25 days on raised African beds, being carefully turned to ensure even drying and prevent defects. This extended process enhances sugar concentration and develops a unique aromatic complexity.

We named this coffee Be Still, inspired by Psalms 46:10… During our morning ritual of making coffee, that first sip is always a wonderful reminder to be still and savor the moment, reflect, give thanks, and remember that God is in control.
