"Honey From The Rock" – Veracruz, Mexico

We are very proud to share with you our latest roast, “Honey From The Rock.” This coffee has wonderful, bright, fruity notes and a natural sweetness that allows you to drink it in any way you prefer. We sourced this coffee from Veracruz, Mexico, and producer Carlos Cadena.

Carlos Cadena of Pocitos is the youngest producer of a long generation of coffee growers from Veracruz. Pocitos Farm is located in the mountainous region of Ixhuacán de los Reyes in Veracruz, and its specialty is naturally processed coffee. The farm has 19 ha of land, of which 16ha are under the cultivation of coffee and 3ha remains a forest reserve of Encino trees, an indigenous tree to the area.

A few years ago, Carlos began to experiment with unconventional processes in his coffee processing. Quality conservation starts with the meticulous selection of coffee cherries. Carlos’ coffee is transported to the mill, where it is floated to remove immature cherries and defects. This is a natural processed coffee that undergoes an extended fermentation of 300 hours. The coffee is then further dried on African-style raised beds for 20 to 30 days.

The inspiration for its name comes from the coffee’s natural sweetness and the mountains in which it grows. This reminds us of Psalms 81:16, which reads, “But you would be fed with the finest of wheat; with honey from the rock I would satisfy you.” This passage reminds us that obedience to our Father God will bring us prosperity and security even through the hardest of times; our Lord will provide for his people. We are reminded of this every day as we continue on this journey of building this business, and we can not thank you enough for your support through it all.
